Homemade Hash Browns

              Hi! welcome to my first Blog post. 
              I specially chose to  make a post on homemade restaurant-style hash browns, because  I have just successfully eliminated fast food and soda addiction from the kids this summer and wanted to give them a healthier once or twice a month option. It's been two months and the kids aged 17, 16 and 10 no longer crave french fries, fast food burgers and sodas.
             I enlisted the help of my eldest daughter Erika to whip up the recipe. Credits go to the Aussie Griller on YouTube. The patties are far from perfect but the taste is absolutely divine! They literally begged me not to re-freeze the fried hash browns for refrying tomorrow morning for breakfast. I gave them one piece cut to bite-sized pieces for a taste-test. Needless to say, the verdict is unanimous; hashbrowns is the new fries. And mom rocks the kitchen once more.
              It's pretty easy to put together and tastes just like store-bought ones minus additives and strange ingredients. So, without further ado:

HOMEMADE HASH BROWNS

Ingredients:

4  medium potatoes, peeled and parboiled
1 tsp. salt
1 tsp. white sugar
1/4 tsp ground black pepper
1 cup flour
2 T skimmed milk powder
1 tsp butter
1 beaten egg

Directions:
1. After parboiling, dice potatoes and place in a bowl.
2. Add the rest of the ingredients and mix well, mashing some on the sides of the bowl, but leave some chunky cuts for texture.



3. Place inside the freezer for 30 minutes for easier handling. Meanwhile, brush a cookie tray with oil. Transfer contents of the bowl onto the cookie tray and press down to about 1/4 inch thick. Alternately, you may roll out the mixture into a rectangle in between two sheets of wax paper. Place inside the freezer until almost frozen solid. Cut into rectangles and freeze solid.

4. Heat oil in a pan and deep fry each patty for about 2 minutes, cooking halfway through. Drain on paper towels and cool completely. The patties will become soft again. Stack together and re-freeze in freezer bags if not using right away.
5. To serve, heat oil in a pan and re-fry the frozen hash browns to develop a crisp, outer skin. This is the most important step. Serve hot with catsup or as a side. Serves 8.
