Buttermilk and Chocolate Pancakes

         It's 9:30 pm and it's really humid. Even if I took a shower, I'm sure to be sweating by the time I've had a change of clothes. This humid weather is probably the reason why Filipinos bathe more than once on a daily basis. More than necessity, it's a cultural thing to be fresh and clean before facing people, even if it's just one's own family, however reluctantly at times.

           A few years back, I found out that even in Alaska, there are Filipinos. What makes this highly irregular, is that scientists have explained that people who are native to extremely cold regions, are physically equipped and adapted. How? with taller and longer noses. Apparently, the long travel through the nasal cavity allows cold air to be warmed by mucous before it enters the body. But, Filipinos have shorter noses, so cold air gets inside the body still, well, cold. This should make us prone to the nasal equivalent of a brain freeze, if ever there is such a thing. How's that for trivia?

           Makes you appreciate how all our bodies were designed, huh? 

           Anyways, I made buttermilk pancakes the other night, with every intention to freeze them for heat and serve breakfast treats. When I went into the kitchen later to pack them, all the chocolate flavored ones were gone. Well, so much for freezing.  

          But then again, to a mom, that's quite alright. Because that means the pancakes were so good, they just disappeared. As I was turning though, there were tell-tale drops of chocolate syrup left on the table. So, that's why. Who can ever resist chocolate?

          Let's get down to business.

BUTTERMILK AND CHOCOLATE PANCAKES

INGREDIENTS:

2 cups All Purpose Flour

1/3 cup white sugar (optional)
1 tsp. salt
1 tsp. baking powder
1 tsp baking soda
2 eggs, beaten
2 cups buttermilk
1 T. melted butter or oil
1 tsp. vanilla
2 T. cocoa powder

PROCEDURE:


1. In a bowl, sift flour, sugar, salt, baking powder and baking soda. Mix well.


2. In a separate bowl, combine beaten eggs, buttermilk and melted butter.


3. Pour egg mixture into the flour mixture and combine with a wire whisk until no lumps appear.


4. Divide the mixture into two and add cocoa powder to one. Mix well. 



5. Brush a little oil on a griddle or nonstick pan or spray with a non-stick spray. Turn heat to low or medium low. Pour 1/4 cup on the pan and flip when edges begin to appear dry, or when bubbles appear.


6. Finish the regular batch, before starting on the chocolate batch. This recipe makes 6 pancakes each flavor. (If planning to freeze, cool completely and pack in freezer bags. Use within two months.)


7. Serve hot with butter and pancake syrup or chocolate syrup.
